Our family loves chicken. And fortunately, chicken is healthy, easy, delicious, and fast to make. Over the years I have tried many versions of chicken for my boys and landed on a go-to simple recipe that wins every time.
I do use the word “recipe” loosely here because it is ultimately just a spice combo that works well… and chicken! My kids always gobble it up, and it is a great base for other dishes including chicken tacos or any chicken pasta dish.
Here is how I make it!
Ingredients:
Chicken thighs (I usually make two packages of organic chicken thighs, so we have leftovers.)
Salt, pepper, garlic powder, oregano
Olive oil
Directions:
Place chicken thighs on a roasting pan lined with aluminum foil.
Coat with olive oil lightly on both sides.
Cover with salt, pepper, garlic powder, and oregano to taste (I use a heavy hand – the garlic powder and olive oil work together to make a crispy crust!).
Bake at 375 degrees for 35 minutes.*
*If you use chicken thighs with bone and skin, cook at 400 degrees for 35 minutes.
*If I am making these for tacos or a Mexican dish, I had a heavy coating of chili powder and cumin to this recipe!
